*~The first is upcycled bread made from unused whey, old rice, and ingredients~* ICS-net Co., Ltd. (Headquarters: Nagano City, Nagano Prefecture, Representative Director: Shogo Koike) was involved in the product planning and development of the new food brand “Linnel Pantry” launched by the popular women’s magazine “Linnel”. The first product, “Whey/Rice Flour Bread,” will be on sale from September 20th (Friday) on the official Linen website.
Our company’s purpose is to make use of precious food resources, and we support the planning and development of products using upcycled raw materials that are edible but otherwise end up being discarded due to various reasons. Shareshima has decided to participate in the product planning and development of “Linen Pantry” because we sympathize with Linn’s desire to “aim for a future that is sustainable, delicious, and kind to the earth and people’s lives.” Shareshima also provides services that support the planning, development, and manufacturing of the food products that customers want to make until they are sold. In this project, I took on the following roles:

* Whey/rice flour bread – 3 sustainable points*
* 1. Utilize whey discharged from cheese factories, etc. *
Whey is generated during the cheese production process, and most of it is treated as wastewater. Focusing on its high nutritional value and flavor, we created bread that takes advantage of the unique goodness of whey.
* 2. Utilize ingredients that are unused due to circumstances * Unused raw materials are produced during food processing for reasons such as “tasty to eat, but with poor shape and color,” and “edible, but cannot be sold on a regular production line.” I used these to flavor rice flour bread.
* 3. Utilize domestically produced old rice*
Some of the rice used in our rice flour bread is old rice that has been harvested for over a year. Making bread creates new product value.

I am very honored to have the opportunity to support the launch of “Linnel Pantry.” We collaborated on the planning and development of upcycled rice flour bread in November 2023, and we resonated with Linnell’s desire to “make it possible to enjoy delicious,
earth-friendly food every day at home,” and decided to freeze it. Together, we have realized the sale of bread series.
This time, we will be introducing a bread series that utilizes whey produced at small and medium-sized cheese factories, as well as rice flour bread that was popular last year.The Shareshima network will be fully operational for both products, and we will accompany all processes from planning, development, and manufacturing.
