Before we eat up the earth, causing the production of carbon dioxide and methane due to livestock farming and deforestation resulting in the production of carbon dioxide and methane, and the endangerment of biodiversity, I think we need to think about the “gourmet food” that will pave the way for the future. The joy of food is not just something that happens in the mouth, but something that brings joy to the heart, region, climate, animals and plants, the earth, and the future. As such, there is a need for creativity that pushes the definition of gastronomy and extends it to its limits. In this class, the one-star Michelin restaurant “Nôl” serves as a classroom, and together with young chefs who will lead the future, we learn about gourmet food and its impact on the earth. We will embody delicious gastronomy for humans as well. architecture should also mean thinking about such things. The concept of circular economy offers many suggestions. “Circular economy is not just about recycling resources, it is about creating organic “connections” between divided people once again.” Akihiro Yasui says this is one of the significances of this idea. In this class, while learning about the principles and examples of the circular economy, we will work with Mr. Kuma Taichi, who has been thinking about architecture from a community perspective, to come up with ideas for architectural symbols. The word symbol has an etymology such as “to raise together.” Through the “Symbol of Circulation”, we will draw a vision that we should all have together.
