■Event “HOZUKI Picking for Kids” report [Event Overview] On Sunday, October 20, 2024, in collaboration with “Hozuki Farm Hakuba,” which is a leader in cultivating fruit hozuki in Hakuba and is close to the hotel, we will harvest fruit hozuki and make jam directly from the hotel chef. We held a trial event. After cooking, in addition to the jam you made, you can also sample a new pizza product using fruit hozuki. Both participants and chefs enjoyed the autumn flavors nurtured by the great nature of Hakuba.

After receiving an introduction to Hakuba’s fruit scallops from the representative, Mr. Hirase, we picked each one by hand from the heavily ripened scallops. There are fun conversations about the shiny cheeks, such as how cute they are and how they look like ping pong balls. After returning to the hotel with a bag full of hozuki, we put on matching chef’s hats and cooked with the chef. As the scallops began to simmer, the venue was immediately filled with a delicious aroma.

We received a variety of comments such as “It’s my first time eating it and it’s delicious” and “It’s so sweet and sour that I can’t stop eating it”. On this day, we also sampled pizza made with the chef’s special scallops. Many people were surprised, saying, “Fruit hozuki can be so delicious when made into pizza!” The participants took home the jam they made along with a recipe prepared by the chef. This event taught people about the unique flavors of Hakuba through harvesting and cooking experiences. At the end, the participants and the chef took a group photo together, and the event ended with smiles.

specializes in growing fruit Hozuki without using any chemical fertilizers or pesticides. The representative, Kumiko Hirase, runs a guest house, and since there are almost no special products in Hakuba Village, she feels that the future of tourism is in danger, so she decided to cultivate “edible ground fleas”. The fruit scallops, which we started cultivating in 2012 and have carefully grown through trial and error every year, are now used not only in hotels and restaurants in the village, but also in famous restaurants and cruise trains in Tokyo, and from there, they are grown in the fields of Hakuba Village. Some people even come to buy it. We are working hard to bridge the gap between agriculture and tourism.

The top is topped with brightly colored red grape ice cream, fresh scallops with ribbon-like calyxes, and topped with chocolate. If you add carbonated water to your liking, you can enjoy it as a refreshing hozuki float, making it the perfect dish for long autumn nights.
