We were able to receive this award thanks to everyone who supported this project, our cooperating warehouses, and everyone who gave us their support. There are over 30 sake breweries in Ishikawa Prefecture, nearly half of which are located in Noto, and most of them suffered significant damage in the recent earthquake. Noto sake has many charms that can only be found in Noto. We must preserve this taste for future generations! I started this project with Mr. Kawana because I wanted to preserve that gentle and deep feeling. Since this was my first attempt, there were many things that didn’t go as planned, but thanks to the support and support of so many people, I was able to continue this project. When I visited in 2023 through an introduction by Mr. Yoshida, I was in the midst of being enthusiastic about the revival of the brewery due to the great impact of the earthquake that occurred in May 2023.
