Perrier-Jouët together with Forma Fantasma. It was done. Guests gathered for the one-night-only banquet and enjoyed a dinner experience curated by the duo of Milan-based Forma Fantasma. Séverine Frelson, Perrier-Jouët’s 8th chief brewer, also visited Japan to unveil the collaboration. At the beginning of the meeting, a lively art talk was held about the background and outline of this
collaboration, and the thoughts behind Formaphantasma’s work and enthusiasm for the collaboration were discussed. It was also an opportunity to learn about regenerative viticulture, a sustainable approach in the Perrier-Jouët vineyards that inspired them. During the talk, a glass designed by Formaphantasma, a special vessel used for dinner, was introduced. The main event will be “Banquet of Nature,” a special dinner experience curated by Formafantasma. When the curtain opens on the banquet, six creative full-course dishes with the theme of protecting and nurturing biodiversity will be served to guests in a space surrounded by flowers and greenery that will decorate the night. The world of coexistence between humans and various plants and animals in the vineyard was expressed in a surprising way in each dish, and served as a message to the guests. In the middle of the dinner, Formaphantasma’s sound sculpture “SOUNDSCAPE”, which is the essence of the experience, was unveiled. This is a work composed of natural sounds, including the sounds of insects, recorded by eco-acoustic composer David Monacchi in the Maison’s vineyards in the summer of 2024. At the venue, two sculptures faced each other, and in the silence, multiple layers of sound echoed from both directions, making the entire dinner space feel as if it had been transported to a vineyard. The pairing dinner prepared by Chef Taichi Oki, prepared especially for this day, includes “Perrier-Jouët Belle Epoque 2015” as well as “Perrier-Jouët”, also known as the champagne loved by Grace Kelly, Princess of Monaco. “Belle Epoque Rosé 2013”, the top Chardonnay “Perrier-Jouët Belle Epoque Blanc de Blancs 2014”, and “Perrier-Jouët Belle Epoque Floresance 2015″, a prestige rosé exclusive to the Japanese market, were served. The
regenerative viticulture program is part of the Maison’s efforts started ten years ago to reduce the environmental impact of
cultivation methods in its vineyards and enhance biodiversity. Formafantasma took over two years to create a physical space that respects the coexistence of various species and fosters a culture of ecology. Formafantasma worked with biodiversity experts from around the world, as well as in France with a scientific committee set up several years ago by Perrier-Jouët. The organization is comprised of naturalists specializing in land and ecosystems, PhDs in entomology and landscape ecology, and experts in regenerative viticulture. The Scientific Committee advised Formaphantasma during the
pre-investigation stage and shared initial findings, including analytical data. This work led to Formaphantasma’s innovative architectural imaginings that nurture non-human species. The architectural project, which aims to realize a better environmental future with a long-term perspective, opened to the public in September 2024 at the Aguçon vineyard in the village of Ambonnay, France. The first phase of the project, Biodiversity Island, is a plot of land supported by functional design. This reflects Forma Phantasma’s concept of “creating a home where local flora and fauna can live in abundance.” Utilizing a 285 square meter site within the Maison’s vineyard, the building was created as a habitat for birds, insects, bats, and plants. There are 74 pillars standing in this section, which maintains an appropriate distance without completely blocking humans. The design is of course Forma Phantasma. The base is handcrafted in France from terracotta and finished with a natural iron oxide glaze. The bright colors of the glaze are used to attract a variety of species. There are 32 pillars with openings and cavities of various sizes and shapes, designed to serve as habitats for insects. Plants planted in plots also provide food for insects. Perrier-Jouët is excited about the positive impact this project will have on local biodiversity. That research and measurement will take place over the next few years. Perrier-Jouët will also collaborate with the Musée National d’Histoire Naturelle in Paris on a research study to enhance the biodiversity of the Coavitale project and vineyard plots where regenerative viticulture is practiced. The ambitious project “Coavitale”, the product of a thoughtful and creative process, is scheduled for completion in 2025. Ristorante ASO “Villa ASO” was opened in 1997 on Old Yamate Street in Daikanyama. A classical Western-style building built in the early Showa era and a 300-year-old zelkova tree have been carefully inherited in this place, where you can enjoy a variety of events including the Italian restaurant “Ristorante ASO” and the European-style “Café Michelangelo.” We have spent precious time with our customers.
