That’s why we are particular about using ingredients that are flavorful, delicious, and as safe as possible for all of our products. Here we would like to introduce three of the most important ingredients that we have carefully selected to ensure that our customers can enjoy our products with peace of mind. 1. Cacao from Taiwan Our chocolate uses cacao from Fuwan, Taiwan. Cacao grown in Taiwan’s rich natural environment using farming methods that do not use any herbicides, chemical fertilizers or pesticides is
characterized by its passionate and bright flavor. Fermentation, which greatly affects the deliciousness of the beans, is carefully carried out in Fuwan’s thoroughly controlled environment, bringing out the fruity and deep original flavor of Taiwanese cacao to the fullest. 2. Domestic organic flour Our baked goods use domestically produced organic flour. Wheat grown with care without the use of pesticides or chemical fertilizers has a rich flavor and is rich in nutrients. By focusing on wheat grown using environmentally friendly farming methods that help maintain healthy soil and ecosystems, we deliver safety and security as well as the deliciousness of the ingredients. 3. Domestic cane sugar Our chocolates and baked goods use domestically produced cane sugar. Cane sugar, characterized by its soft sweetness and deep richness, is rich in minerals and nutrients. By using domestically produced cane sugar, which has a long aftertaste, brings out the deliciousness of the ingredients, and provides a gentle sweetness, we aim to create a flavorful finish that lets you feel the blessings of nature. By paying close attention to the ingredients we use, we aim to create sweets that are gentle on the body and mind. Please enjoy our carefully crafted sweets that bring out the natural and rich flavor of each ingredient to the fullest.

When making sweets, we think not only about what ingredients to use, but also about what not to use. Generally, additives such as “expanding agents”, “flavoring agents”, and “coloring agents” are used to efficiently improve texture and aroma. However, as a small shop, we do not use these materials and instead use our “manufacturing method.” We are particular about ingredients and recipes, are careful about how well we mix the dough, and quickly bake warm dough to achieve fluffy texture. We deliver “fragrance” using natural ingredients with a focus on freshness and quality, as well as recipes and production methods that make the most of their scent. We express “color” by cherishing the colors of nature itself. We believe that changes over time are a natural beauty. The
manufacturing method is simple and requires patience, but it gives the sweets a great deal of power. It brings out rich flavors and aromas that bring joy to your heart.

That’s why I want to give you something natural that you can eat with peace of mind. To care for someone means to care about their mind and body. Therefore, we naturally want to give away something that is made to be kind to people and the earth. There are times when you wonder whether it’s better to give a gift or not. Still, when I imagine the joy on the other person’s face, my heart becomes happy and I want to give them a gift after all. If that’s the case, think about what will make both the gift giver and the gift recipient feel comfortable and happy. Think about the recipient’s life, not just their present. Think about the people around you and the person you are giving the gift to. I believe that by incorporating such thoughts into our products, even small sweets can brighten people’s hearts and enrich them.

Born to a father who ran a French restaurant, the kitchen was my playground from an early age. Naturally, I started making sweets from an early age, and because of my mother who was often sick, I started paying close attention to the ingredients. My youth was spent with traditional Japanese culture. After seeing a Kabuki performance during a junior high school social studies field trip, I was captivated by the beauty of traditional culture and began attending Japanese dance lessons. The roots of dancing lie in the act of appeasing the gods and offering gratitude. Dancing plays an important role in Shinto rituals and has long been performed in rituals and festivals. We learned and rehearsed each performance beautifully depicting myths and legends, the beauty of nature and prayers, and human passion and loyalty. My master’s dance was a very beautiful dance. There are good dances and beautiful dances. Good dancing is about movement, form, and timing. Beautiful dancing is not only about being good at it, but also about dancing with God and people in mind. Eventually, I decided to become a confectioner and trained as a professional, but I believe that the beauty I learned through dance applies to confectionery as well. I want to make sweets that are not only delicious and beautiful, but also with people in mind. Carefully create something that you think is really good. Thinking carefully about others and giving gifts. By doing so, you can share the joy that makes your heart sing with the other person. That will spread to those around you. I think that what I felt in my father’s kitchen and what I learned from dancing were all connected here. As the name suggests, Kagurazaka was chosen as the place to open our business due to a combination of luck and luck.As the name suggests, it is a place where dancing has been dedicated to the gods since ancient times. It is also a place where good old Japanese restaurants and people related to food live. Let’s start from that place. Each of these sweets may be very small and fragile, but those that honestly utilize the power of natural ingredients have the power to enrich your day and your life. Honest and heartwarming. 24 works received awards at the ICA (International Chocolate Awards) and AOC (Academy of Chocolate Awards).
