After that, I started to get interested in wine, and I started drinking wine actively, although I had only been drinking it casually up until then. From then on, Nishino’s interest in winemaking began to grow, and he deepened his knowledge by visiting wineries in Japan and abroad, further strengthening his passion for wine. Wine culture nurtured in Japan’s hot and humid climate: Wine making in Echizen Fukui Prefecture was a hot, humid region with heavy rainfall, making it difficult to grow grapes. However, we decided to build a winery in order to foster a new industry in Echizen City, Fukui Prefecture. My basic knowledge of winemaking came from learning about fermentation using bacteria from my father, who was well versed in agriculture. I also attended a wine college held by Fukui Prefecture, and in 2019 I started planting grapes on a trial basis using vacant land at my company. Through trial and error, we repeatedly improved the soil to make it suitable for Echizen’s hot and humid environment.

All grape cultivation is done by hand, and organic fertilizers are used. We are particular about making wine that takes full advantage of carefully grown grapes. By using natural fermentation bacteria that change the taste of the wine slightly every year, the characteristics of each year are revealed, and we offer a taste full of Echizen’s climate. *Terroir is a term used primarily in the wine world to refer to the natural environment surrounding a vineyard. Soil improvement for winemaking is carried out with a focus on Echizen products. By mixing local sand from Mikuni into the clay soil and creating soil with good drainage, we created an environment in which grape roots can grow well. By adding scallop shells aged in Echizen, the soil is perfect for white wine with a strong mineral content. Nishino believes that the most important thing for wine is the soil, so he spent a huge amount of money improving the soil, digging up the soil to a depth of over 1 meter and creating high-quality soil. The acacia barrels used at SIX THREE ESTATE are sourced from Europe and are roasted to a soft finish, giving the wine a rounded and deep flavor. While we are particular about natural fermentation, no additives, and no filtration, we also strive to retain bacteria to maintain stable quality and improve taste reproducibility.
