We were literally starting from scratch, but fortunately, one of our members had experience in cooking, so we held a curry class at the restaurant after club activities, and we continued to gather at the restaurant many times after that to experiment and error. In search of curry that middle and high school students would want to go eat. In this project, I learned from the restaurant about the depth of spice curry, such as the mixture of spices and the ingredients that go well with the spices, and gradually I started thinking, “I want to give junior high and high school students who are not yet aware of the appeal of spice curry an opportunity to try it.” I did. To achieve this, we have focused on creating a flavor that is not too spicy and suitable for an introductory dish, yet juicy and satisfying. In addition, we aimed to create a curry that is high in protein and nutritious, which is desired by athletic club members who are always concerned about building their bodies. We consulted Kitamura Miso Honke, a long-established local miso shop with which we had previously collaborated on another project, and they provided us with the idea of “shio koji,” which softens meat and increases flavor, as well as samples for trial production. In this way, a “community-based curry” was born, made at a spice curry specialty store in front of the station using salt koji from a long-established local miso shop, for not only athletic club members, but also health-conscious people and young people living in the area.
