Favorite sushi topping Sushi eaters’ favorite toppings (multiple answers allowed) are “tuna (medium fatty tuna)” and “salmon,” each in the 50% range, “shrimp, amaebi,” “tuna (lean),” and “squid.” It’s in the 40% range. “Salmon” is ranked first among men in their 10s to 30s and women in their 10s to 50s, while “shrimp and amaebi” is ranked first among women in their 60s to 70s. “Hotate” ranks second among women in their 60s and third among women in their 70s. In Hokkaido, “scallops”, “salmon”, “shrimp and amaebi” are the top three, and “white mackerel/mackerel” and “crab” also have high proportions.

Types of sushi to eat We asked people who eat sushi what kind of sushi they eat (multiple answers allowed). 78.7% said “Purchased at a store”, 71.0% said “Eating out/conveyor belt sushi”, and over 20% each said “Items made at home” and “Eating out/Sushi restaurant”. The number of items made at home has been decreasing compared to previous surveys. Eating out/conveyor belt sushi is more popular among young women and men in their teens and 20s.

Where to buy sushi When we asked people who eat sushi purchased at a store what kind of store they buy it from (multiple answers allowed), 88.1% said “inside a supermarket”, 31.7% said “takeout from a conveyor belt sushi store”, and Take-out sushi restaurants and take-out specialty restaurants” accounted for 23.4%. Department stores have a high proportion of women in their 60s and 70s. “Take-out sushi restaurants and take-out specialty restaurants” is slightly higher in Kanto and lower in Kyushu. 5. Important points when purchasing sushi The important points for people who purchase sushi (multiple answers allowed) are “type of ingredients/toppings,” “price,” and “taste,” each in the 60% range. “Freshness”, “best before/expiration date”, and “safety and hygiene management” are higher among older women. << Comments from respondents >> ☆ What is sushi for you?
