Rising prices, especially soaring food costs, are a source of concern for restaurants and are putting pressure on restaurant management. It has become difficult to provide delicious meals and drinks using the same ingredients as before. Under these circumstances, it is important not only to increase the local food self-sufficiency rate, but also to actively use local ingredients with low food miles (the environmental impact of food transportation), and to utilize the ideas and creativity of chefs. In the future, there will be a need to come up with dishes and drinks that have added value. At Food HEROes U-30 COMMUNITY, which we operate, we are aware of this trend and have deepened our knowledge of local ingredients by visiting production areas in urban centers such as Tokyo and Ibaraki Prefecture and interacting with producers. Five years later, the number of births for current 18-year-olds (born in 2005) has decreased by 11% to 1,062,530, and the number of births for current 8-year-olds (born in 2015) has decreased by 17% since 2000. There are now 1,005,721 people. While it is known that the working population will definitely decrease in the future, the restaurant industry is also an industry that has been heavily affected by the coronavirus pandemic. The population of the accommodation and food service industry was 4.2 million in 2019, and in 2020 it was 3.91 million (down 7% from 2019), and in 2021 it was 3.69 million (down 12% from 2019).
