This book compiles a variety of recipes for unique “Creole cuisine,” a blend of American, French, and Western cultures, including “a delicious omelet” and “crayfish soup,” compiled with Yakumo’s insatiable curiosity, appetite, and ethnologist’s spirit. This book introduces a variety of home-cooked meals that are “both economical and simple” and make good use of leftovers, written in a humorous and eloquent style. It also includes many of the author’s own illustrations! Example: [Crayfish Soup for Blood Cleansing] Chop two pounds of lean veal into small pieces. Add 36 crayfish and a handful of green chervil, and mash thoroughly until the crayfish are pulverized. Put this into a stewpot and pour in three pints of well water. Add a little salt and bring to a boil. Remove from the heat and let it sit for about 30 minutes, then bring to a simmer again and strain after an hour. For maximum benefit, do not eat anything else but this soup.

In other words, rather than a recipe book, it is a cookbook to read, a book to enjoy. As a translator, I respected the texture and documentary value of Hearn’s oral history and tried to translate as faithfully as possible to the original. (Omitted) If you read this and think, “Now, let’s make this!”, you’ll be at a loss.
