On Friday, October 17th and Sunday, October 19th, 2025, Nicolai Bergmann NOMU aoyama in Minami-Aoyama, Tokyo, will host a collaborative dinner featuring flower artist Nicolai Bergmann, who blends Scandinavian and Japanese aesthetics, and JED’s American Bistro, a restaurant that showcases the natural beauty of New York’s upstate.

JED’s American Bistro Original Flower Box by Nicolai Bergmann In the past, Japanese life was filled with moments of feeling the changing seasons through the changing colors of the trees and the bounty of seasonal produce on the dinner table. However, in modern times, opportunities to incorporate a sense of the seasons into daily life are becoming fewer and fewer. This collaboration was planned with the theme of “awakening a forgotten sense of the seasons through nature, art, and food.” The fusion of flowers and food, woven together by Nicolai Bergmann’s autumn flowers and JED’s American Bistro’s signature course, will provide a special experience that stimulates all five senses. The venue will be transformed into a quiet, warm autumn space, fitting for the eve of Halloween, creating a special one-night-only experience. Furthermore, a sustainable course meal that combines organic ingredients delivered directly from Upstate New York with seasonal Japanese produce will be paired with champagne from TELMONT, a French champagne house that places sustainability at the heart of its philosophy, allowing guests to fully savor the abundance of nature and the beauty of the seasons.
