Next to Tetsuya No. 2 playing with a basketball-shaped orange sherbet is a melt-in-your-mouth rare cheese mousse wrapped in half-cut lemon peel, inspired by the honey-preserved lemons that Riko used to make. A bold dish is also topped with a drizzle of honey drizzled over the lemon peel. At the bottom of the glass is lemon pulp jelly, and the balance of sweet and sour becomes exquisite as you eat it. Birthday cake tarts will also be available to celebrate the birthdays of Kazunari Takao and Rinnosuke Mitobe, who will be celebrating their birthdays during the exhibition.
