The tilefish wrapped in kelp and steamed in white wine is served with Hokkaido Ezo abalone, yuzu beurre blanc sauce, and lime-flavored tomato coulis for a refreshing taste. The main dish is roasted Kuroge Wagyu beef fillet that is cooked in a simple way to bring out the flavor. Please enjoy with red wine sauce. The foie gras is a croquette and is dressed in a green Christmas color. Our bouche de noel dessert is made with organic chocolate, sugar and vanilla beans. Chocolate sponge baked moist without using flour is filled with chocolate cream and rolled up, meringue is squeezed on the surface like bark, and a burner is used to create a sweet scent like baked s’mores. Christmas Cake “Strawberry Shortcake”
Hyatt Centric Ginza Tokyo’s Christmas cake, which is gaining popularity every year, will be prepared as a “Strawberry Shortcake” made with organic ingredients this year, and reservations will be accepted in limited quantities.
“Strawberry Shortcake” is a moist baked sponge dough placed in a circle made of Valrhona Orelis chocolate, which uses natural-oriented brown sugar. Vanilla syrup is poured into the dough, and fresh strawberries are sandwiched with vanilla whipped cream. The strawberry on the top is glazed with strawberry and raspberry jam and decorated with gold powder to give it a gorgeous look. We use organic sugar and vanilla.
