Innocence Co., Ltd. (Headquarters: Bunkyo-ku, Tokyo, Representative Director Hiromitsu Mizuhara, hereinafter Innocence) will open a new store “Koike no Ikei” in Sugamo on October 10, 2022 (Monday / holiday).
What is the ramen group “Koike series” listed in Michelin 3 stores? The Koike group (Innocence) was born in 1985. After entering a vocational school for shoe craftsmen after working in a band, he experienced the manager of the izakaya “Torikizoku” and ramen. Group. In 2013, “Tsukemen Koike” was founded in Kamikitazawa, and the following year it was renewed as “Ramen Koike”. The niboshi-style ramen, which has been thoroughly stripped of all the extra flavor, has been well received, and has grown into a store with long lines. After that, he opened “Chuka Soba Nishino” in Hongo 3-chome, “King Seimen” in Oji, “President” (*) in Hongo 2-chome, and “Tsukemen Kinryu” in Kanda. In the Michelin Guide Tokyo, Ramen Koike has won the Bib Gourmand for seven consecutive years, Chuka Soba Nishino for four years, and King Seimen for two consecutive years.

Until now, the group has been represented by ramen with an impressive, clear taste, but “Koike no Ikei” is a store that focuses on Iekei ramen, which can be seen as the opposite direction. In fact, this Iekei ramen has been offered at Ramen Koike as an irregular limited menu since 2018, and has been gaining popularity among fans and staff. We are pleased to announce that we will be making our debut as a signboard product of the new store, “Tonkotsu Shoyu Ramen”, so that you can enjoy it anytime.
The tonkotsu and chicken stock is carefully strained to remove any extraneous flavors, sublimating the richness of the tonkotsu into a refined, creamy flavor. It is characterized by a mellowness that makes you feel the quality. Homemade noodles with a chewy texture prepared by “King Seimen” are covered in a rich, smooth and thick soup. For toppings, turn on char siu, spinach, green onions, and seaweed. The char siu is cooked in a vacuum at low temperature, which is well known in the Koike series, to create a moist finish and condense the umami. You can also add garlic to your liking and enjoy a punchy taste change. Also, since the moderately salty soup goes well with rice, it is also recommended to wrap white rice with seaweed and smoked char siu.
Although it looks like a classic, it is a cup that you can feel the Koike series, which has achieved elegance and ease of eating while being family lineage by pursuing good taste in each process and ingredient.
