Commitment to rice, seaweed, and miso
Based on the concept of “enjoying traditional food culture,” this is a specialty rice ball store that uses carefully selected ingredients through direct dealings with producers.
The rice used for the rice balls is 100% specially cultivated rice Tsuyahime from Inoue Farm in Yamagata Prefecture, where organic fertilizers are used throughout the farm. At the time of opening, it will be offered as a new rice in 2022.
Seaweed is roasted seaweed made using traditional methods without acid treatment, which can lead to deterioration of the marine environment. Seaweed that has not been acid-treated, which is rare these days, can be enjoyed more deliciously when made into rice balls.
The miso used in the miso soup is made using traditional methods from well-established miso breweries all over Japan. The miso soup is delicious even without dashi, and the dashi is made from domestically produced bonito flakes to create a miso soup that tastes miso.
