At Dining & Bar LAVAROCK in winter, we will focus on fermented foods that bring out the natural flavors of the ingredients. We offer a menu using fermented foods. We are particular about using ingredients from the Kansai area as much as possible. Incorporating Japanese fermented foods such as “miso” and “tsukemono” into American grilled dishes, as well as “narezushi” made by pickling fish and rice and fermenting them with lactic acid, the menu is full of creative chefs. For appetizers, tea-smoked duck is served with a sauce made with the same tea leaves and a blue cheese coffret. The baked risotto, which is made by adding sweetfish narezushi to fermented brown rice boiled in pure rice sake, is a dish where you can enjoy the rich aroma of cheese. For the fish dish, we marinated winter seasonal cod with Cajun spices and grilled it fragrantly. For the sauce, you can enjoy the spiciness and sourness of the pickles by adding “Hinosai-zuke”, which is a pickled
traditional vegetable of Shiga. For the main dish, please enjoy a meat dish with moderate fat “Naniwa Black Beef” simmered with local beer and Osaka’s “Ogen Miso”. Dessert tart using Osaka’s “Kawachi wine” will be served with frozen yogurt.
