We carefully baked each one this year, cherishing classic recipes and adding the essence of bakery craftsmen. We have also prepared a “Mini Stollen Chestnut and Wasanbon” using the Japanese material “Wasanbon”, which can be enjoyed when people gather during the year-end and New Year holidays.

Stollen can be found in bakeries and patisseries around the world during the holidays. There are various theories, but it is a traditional German pastry that is said to resemble an infant Jesus wrapped in a swaddle. In Japan, it is popular in shops and home recipes, and there is a custom of slicing it little by little during the four weeks of Advent in anticipation of Christmas.
Today, it is enjoyed with a wide variety of flavors, but at DEAN & DELUCA, bakery craftsmen bake each one by one, sticking to the recipe and taste that have been loved for a long time.

That’s why the key to deliciousness is the dough. Spices such as cinnamon and cloves are thoroughly mixed in, and the butter is mixed while enclosing air to create a moist and soft dough. To this, add berries soaked in rum for about a month, and orange and lemon peels soaked in kirsch to make it even more moist. In addition, vanilla is added to give the fragrance a gorgeous spread.
Furthermore, dry fruits and plenty of almonds that have different textures between whole and sliced ​​are mixed in. This year, we increased the amount of almonds to further enhance the texture and aroma.
After shaping the finished dough, cover it with a thinly stretched dough. As a result, ingredients such as almonds and dried fruits peeking out from the dough do not burn when baking in the oven while maintaining the aroma. In addition, excess moisture does not fly away, and it is baked moist.
When baked, go to the smooth butter. This year, it is soaked twice, sprinkled with granulated sugar, left to rest for a day, and sprinkled with powdered sugar to finish. Every year, we update it little by little and pursue even more deliciousness.
When sliced, the dried fruits and almonds reveal their faces, and each bite fills your mouth with a rich texture and buttery flavor. A simple holiday cake made with rye dough, acacia honey and spices. Based on a recipe from northern France, we added butter and milk and baked it moist. As the name “Spice Bread” suggests, spices such as cinnamon, ginger, cloves, star anise, and honey create an elegant aroma that spreads in your mouth. Add raisins and semi-dried prunes to make it even richer. We recommend slicing it and eating it as is or with cheese or liver paste.
