At the same time, we will also release the accommodation plan “Prime Shinshu Stay” that includes this dinner, special cocktails, and breakfast.

This winter, we are offering a special course that incorporates Shinshu’s local cuisine and traditional food culture with a French sensibility. Starting with deer pâté, a traditional food of the Suwa region, followed by grilled eel wrapped in foie gras, eaten in the Nanshin region, and Nagano’s local dish “Kikoku” served at

A special dinner course that incorporates ingredients from Shinshu and the food culture of Shinshu into the menu, from the selection of ingredients to the finishing touches to bring out the appeal of the ingredients.
The soup is made by slowly simmering beetroot in a siphon, accented with Azumino wasabi. Grilled Shinshu premium beef fillet topped with rich butter mixed with Shinshu miso, served with Shinshu soba galette. Incorporating Shinshu’s taste and food culture everywhere, it is a playful arrangement that you can enjoy.
