LAMMAS, a cheese specialty store that opened in Mishuku in April 2014, sells cheeses from all over Europe, with a focus on France, Italy, and the United Kingdom.
A cheese ripener is someone who specializes in the aging of cheese. We have our own maturing warehouse, where we carefully mature cheese while managing temperature and humidity, and performing maintenance such as flipping and brushing.
At Rammus, we believe in providing delicious cheeses that are carefully prepared by cheese producers and maturers in distant countries in the best possible condition. I’m here.

1. Briar-Savarin Affine (France / white mold)
A beautiful looking cheese made by adding fresh cream to milk. There is also a fresh type, but this is a matured type with a thin white mold growing on the outer skin. This cheese was developed in Normandy at the request of the Parisian cheese merchant Henri Androuet, named after the French gourmet Briar-Savarin. Today, most of it is produced in the Ile-de-France region.

2. Ossoirati (France/Hard)
AOC-certified in 1980, this artisan cheese made from whole sheep’s milk was born at the foot of the Pyrenees, which borders Spain. The name comes from the “Valley of Ossau” in the Bearn region and the “Irati forest” in the Basque country. Today, it is popular not only in its original production area, but also throughout France, and is loved by the people.
During the manufacturing process, it is regularly turned upside down and polished for at least three months. After that, it is slowly aged in a temperature- and humidity-controlled aging warehouse. Mons matures for a minimum of 6 months to bring out the full potential of this cheese.

3.Thoma San Sebastiano (Italy/Hard)
A cheese made from the milk of cows raised on pastured hay. Carefully aged for over 8 months.
The name of the cheese comes from the saint who is dedicated to the church built near the meadow.
