L’Osier aspires to achieve the SDGs with a sense of urgency: “If we don’t protect our beautiful environment, we won’t be able to obtain beautiful ingredients, and we won’t be able to pass on a beautiful food culture to the next generation.” Many of the ingredients used at L’Osier are pole-and-line fish from fishermen who practice sustainable fishing, free-range chicken and eggs from environmentally friendly poultry farms, and vegetables from organic farms.
