Matsumae Town, located in Ehime Prefecture, boasts the highest production volume of the rare domestically produced barley “Hadaka Mugi” for 35 consecutive years.
In Matsumae Town, we are developing the “Sprout and Harvest Barefoot Project” to develop delicious and healthy products using “Hadakamai”. This project started in 2016 with the desire to let more people know about naked rice, which is said to be high in dietary fiber and good for health.
Naked barley is a type of barley that has 10 times more dietary fiber than white rice and is attracting attention in the health boom. The water-soluble fiber called “β-glucan” among the dietary fibers, which is the main component of “Hadaka barley”, has the function of normalizing the LDL cholesterol level in the blood, and is attracting attention for its health functions.

This time, eight popular restaurants in Tokyo, which are deeply related to Ehime Prefecture, have developed a menu using healthy naked barley, and will be open for three weeks from November 10 (Thursday) to November 30 (Wednesday), 2022.
