■ About Hida Takayama’s local sake “Kusudama”
Founded in 1623, high-quality sake brewed by Hirase Sake Brewery, which has been dedicated to sake brewing in Hida Takayama for about 400 years.
The Hida region has all the natural blessings necessary for sake brewing. First of all, “rice”. “Hidahomare,” a high-quality rice suitable for sake brewing produced by Gifu Prefecture, is a labor-intensive rice that can only be harvested in limited quantities. Farmers and sake breweries work together day and night with a single-minded desire to produce sake.
And “water” is an important raw material in sake brewing. Kusudama’s brewing water uses subsoil water that has been filtered underground (Mizunashi River) at the foot of Mt. Kura and Mt. It is super soft water with very few impurities and a hardness of only 10.0ppm (American hardness). Kujudama’s sake brewing is supported by an environment that allows plenty of good quality water to be used. The other is “heart”. The existence of a straight brewer’s heart that is not bent by the times or the environment is essential.
