Founded in 1623, high-quality sake brewed by Hirase Sake Brewery, which has been dedicated to sake brewing in Hida Takayama for about 400 years.
The Hida region has all the natural blessings necessary for sake brewing. First of all, “rice”. “Hidahomare,” a high-quality rice suitable for sake brewing produced by Gifu Prefecture, is a labor-intensive rice that can only be harvested in limited quantities. Farmers and sake breweries work together day and night with a single-minded desire to produce sake.
And “water” is an important raw material in sake brewing. Kusudama’s brewing water uses subsoil water that has been filtered underground (Mizunashi River) at the foot of Mt. Kura and Mt.
