Sushi at Awaji Highway Oasis (operated by URA Co., Ltd. / location: Iwaya, Awaji City, Hyogo Prefecture), where you can enjoy seasonal ingredients while looking out at the Akashi Kaikyo Bridge and shop for specialty products. At Sushitomi, a full-fledged sushi restaurant on Awaji Island held by craftsmen (Oasis building 2nd floor), we will offer a new winter-only seasonal menu from December 27, 2022 (Tuesday).

Fukura Port, where Awaji Island 3-year Tiger Pufferfish is farmed, has been working on tiger puffer farming for about 30 years. A few years ago, the results started to improve. At other aquaculture farms, many of the 800g or less that have been raised for two years with little risk are shipped, but “Awajishima 3-Year Tiger Pufferfish” is raised for one year longer and bears the risk of lowering the survival rate, but weighs 1.2 to 1.8kg. It is grown and shipped. At 1.2kg, the black streaks peculiar to farmed fish disappear, the meat becomes firmer, and the taste is almost the same as wild tiger puffer.
