At Hakone Kowakien Motoyu Morinoyu, one of Hakone’s largest authentic day-trip hot springs located in Kowakudani, Hakone (location: 1297 Ninotaira, Hakonemachi, Ashigarashimo-gun, Kanagawa Prefecture; manager: Motonobu Matsuyama, hereinafter referred to as Motoyu Morinoyu), With the cooperation of “JA Fuji Izu” (Location: 415-1 Shimokanuki, Shimokanuki, Shizuoka Prefecture, Shizuoka Prefecture) Yamatsuba ginger seeds that have a “soft texture and mild spiciness” are certified as Hakone Seiroku Mishima vegetables. “Yamatsuba Ginger no Yu” using ginger parent stock will be held from December 26th (Monday).
At Motoyu Morinoyu, we aim to “reduce food loss as much as possible from the perspective of SDGs, make effective use of things that are not on the market until the end, and spread the local seasonal blessings.” In 2022, we also held “Soga no Umeyu” and “Raw Okara Moist Bath”, etc., which were well received.
The seed ginger used this time is the ginger that was cultivated in the previous year and has been buried in the ground. After the growers dig up the seed ginger around December, they select and grow it, and then harvest it around August of the following year. However, only the offspring are used for breeding, and the parent strain is discarded because it does not germinate any more. However, we think that such a parent stock has a strong fragrance, and if you soak it in hot water, you can enjoy “the ginger hot water”, so we will reuse it as a hot spring.

・Outline of Yamatsuba Ginger
Ginger leaves have been cultivated since ancient times in the Yamatsu area of Tsukahara, Mishima City. It is a rare crop that currently requires only 6 producers to take over the seeds because it takes a lot of time and effort.
The season for fruits and vegetables is short, in July and August, but this time it is attracting attention as a material that can be used as a hot spring or as a processed product.
