A survey to explore the possibilities of traditional Japanese ingredients by next-generation food tech. A total of 1010 responses were collected.

Sydecas Co., Ltd. (reading “Sidecas”, Kakogawa City, Hyogo Prefecture, Representative Director: Masahiro Yoritama, hereinafter “our company”), which develops the next-generation food tech business NinjaFoods, conducted a survey on consumption and impressions of konjac. and collected a total of 1010 responses. As a result, 70.89% of the respondents answered that they “rarely eat” or “have never eaten” konnyaku noodles, and 65.94% of those who eat konnyaku in oden at convenience stores. On the other hand, regarding impressions of konjac, positive responses such as “low calorie” and “good texture” stand out. It turns out that there is still room for improvement in traditional methods of providing healthy ingredients.

We asked about the consumption frequency of various “how to eat konnyaku” such as “konnyaku noodles” and “convenience store oden”. 33.07% of people “rarely eat it” and 37.82% of them “have never eaten it” for “noodle substitute (konjac noodles)”, resulting in over 70% of people hardly eating it.
“Convenience store oden” is also 38.81% who “rarely eat it” and 27.13% who “have never eaten it”. 37.23% of the respondents answered that they would visit once (about 5 times a year).
In response to the question, “Please tell us your vague impression of konjac products (including ○○ containing konjac) in general.” Yes,” and it turned out that the majority of people have a healthy image of konnyaku.

■ Future activities
This survey revealed that while many people regard konjac as a healthy ingredient, the frequency of eating it is lower than expected. We will continue to analyze the questionnaire and create opportunities for more people to eat konjac.

■ NinjaFoods, a next-generation food business that goes beyond all food restrictions
There are many people in the world who have dietary restrictions such as diabetes, high blood sugar, obesity, and allergies.
Therefore, we focused on konnyaku, an ancient Japanese plant-based healthy food. We aim to realize “a world where everyone can enjoy delicious food without restrictions” by utilizing “NinjaPaste”, a material that keeps konjac paste in a unique technology, as a next-generation ingredient.
■ Next-generation konjac material NinjaPaste
NinjaPaste is a next-generation konnyaku material that has succeeded in keeping regular konnyaku in a paste form without completely solidifying it. By mixing it with other materials, it reinforces the target fibers and forms konnyaku gel, realizing strong binding molding. Therefore, it is possible to mold foods that take advantage of the goodness of the ingredients without using wheat gluten, eggs, or starch syrup.
