The rice is cultivated in a way that is deeply focused on regenerating the surrounding ecosystems such as forests and paddy fields. Fermented using Edo period techniques with minimal artificial intervention. Brewed yeast is active, and the flavor is also affected by the weather and season.

Newly this year, -Niida Honke- (Fukushima Prefecture)’s
“Shizenshu-Yamamori” has been added to the Patagonia Provisions natural sake collection. Founded in 1711, as a sake brewery that has been making sake with natural water for 300 years without change, we have a desire to protect the mountains and the water, as well as the mellow taste unique to natural sake and the variety of ways to enjoy it. I put a message with. Both malted rice and kakemai are used Kamenoo cultivated in our own fields, and pure rice sake brewed in 80-year-old cedar barrels from our mountain. With a rice polishing ratio of 85%, it is basically dry, but with a 4-stage brewing method, it has a well-balanced finish with sweetness and umami. In order to enjoy a well-balanced and unique taste, please drink it cold or at room temperature when it is freshly squeezed to feel its freshness. In the middle of winter, when things settle down, you can enjoy it by warming it up a little so that the acid raised in the wooden barrel will stand out. We also recommend warming it outdoors.

Shizenshu – Yamamori (Niida Honke)
New product “Hand” with the message of rich nature and handwork -Terada Honke- will release a new original natural sake named “Hand”. 2021 contains the message that soil, sake, and food cannot be separated, and that everything from creating an environment that nurtures rich nature and breweries to cultivating microorganisms, to growing rice and making sake, is done by hand. It is a junmai sake that has been updated from the “Five Musumes” of the year. The koji rice is Miyama Nishiki, which was cultivated by Tetsuya Okano, a local farmer in Higashisho Town, without the use of pesticides and chemical fertilizers. Uses stork rice from Tsuboguchi Agricultural Future Research Institute. Koshihikari-based kakemai produces a well-balanced finish with a complex and diverse taste and an aroma that feels the power of the soil. Sake with a chewy quality is suitable for warming. Please enjoy it even in the field of the winter season.
