From the sake brewery “haccoba -Craft Sake Brewery-” launched in February 2021 by haccoba Co., Ltd. (Minamisoma City, Fukushima Prefecture, Representative Director: Taisuke Sato), squeezed orange wine (Delaware). “Taru Maru” is a sake that is fermented with rice and aged in wine barrels. We will sell two types, a shallowly aged type and a deeply aged type, for two consecutive weeks. Continuing from last year, we are collaborating with the winery “Fattoria AL FIORE” in Kawasaki, Miyagi Prefecture.

■ Open up the frontier of sake by making sake that transcends barriers There was a time in Japan when each household enjoyed making sake using a variety of ingredients called “doburoku”. However, during the Meiji period, a license system was introduced for sake brewing, making it difficult to freely brew sake.
We believe that free sake brewing in the past is the source of fermentation culture, and we share the joy of making sake by pursuing sake brewing that transcends genres.

In addition, this time the sake is aged in wine barrels. We have experimentally prepared two patterns, one that is shallowly aged and fresh and the other that is slowly aged.
Grape pomace, which had once served its purpose in winemaking, was reborn as a new type of sake by mixing it with rice and maturing it. I would be happy if you could feel the potential of marl.

This year again, we received orange wine lees (Delaware) from the winery “Fattoria AL FIORE” in Kawasaki, Miyagi Prefecture. I wanted to deepen the combination of sake and wine even more than I made last time, Maru Maru. Did.
Wine barrels were originally used for French red wine (Gamay). At Fattoria AL FIORE, it was used to age white wine (Chardonnay). Based on the umami of rice, various grape flavors are combined to create a complex and fascinating taste.

■ How to enjoy “Tarumaru”
Keep both chilled in the refrigerator. It is recommended to drink around 10-13°C.
It is a sake that you can enjoy pairing with a wide range of meals, such as wine-steamed seafood, ajillo, aged salami and cheese, and soup stock hot pot.
