Neo Bistro “XL Neo Bistro & Wine Bar” operated by MIMO Co., Ltd. (Headquarters: Minato-ku, Tokyo, Representative Director: Yasuhiro Suzuki) will open on Thursday, January 5, 2023. Grand opening on the 6th floor of GICROS GINZA GEMS in Ginza 6-chome. As a restaurant where you can spend a memorable day with your loved ones. Based on classic techniques, we carefully select seasonal ingredients, make the most of the ingredients, bring out the umami, and offer French cuisine that is particular about the sauce that is the essence of French cuisine. The classical French cuisine created by Chef Suzuki, who has experience as the head chef at numerous restaurants, is presented in a gorgeous and modern presentation that is suitable for the streets of Ginza. XL Neo Bistro & Wine Bar offers table and counter seating. The table seats with large windows overlooking the city of Ginza are recommended for dates and entertainment. Counter seats allow direct communication with the chef about the day’s recommendations and customer requests. You can enjoy it like a familiar bistro. We offer not only course meals, but also appetizers, seafood dishes, meat and game dishes, and a la carte menus using ingredients carefully prepared by our chefs. XL owner and sommelier Yosuke Hayashi
Started his career as a sommelier in 2002 and worked as a manager and sommelier at restaurants of various genres such as Italian, French, and Japanese. He also has experience as a lecturer at a major long-established wine school. In 2022, he became the owner and sommelier of XL Neo Bistro & Wine Bar. He is a senior sommelier certified by the Japan Sommelier Association and won the Silver Award in the Austrian Wine Ambassador Selection Contest. He has also co-authored wine-related books.
XL head chef Yasuhiro Suzuki

He started his career as a chef at the Yokohama Grand Intercontinental Hotel in 1998, and has experience as head chef at many French restaurants such as Chevalier du Vin and MAISON BERSAC. Since 2019, he has been the executive chef of Ladurée in Japan, overseeing the kitchens of all salons. In 2022, he became head chef of XL Neo Bistro & Wine Bar. Holds sommelier qualification.
