As a result of a survey on the price of ehomaki in the 2023 Setsubun season, which will be sold at a total of 104 companies, including major convenience stores, restaurant chains, supermarkets, department stores, and famous Japanese restaurants nationwide, the general gomoku and nanome ehomaki ( The average price for futomaki (thick rolled rolls) was 898 yen. Compared to 825 yen in the comparable year, it increased by about 8.8%, or 73 yen. Seafood Ehomaki, which has many luxurious and high-end items, averaged 1,633 yen, an increase of 10.7% or 158 yen from the previous year (1,475 yen).
Like osechi ryori, ehomaki has been affected by rising food prices. The price of tamagoyaki used for futomaki has risen sharply, and dried seaweed, which has begun to be in short supply due to a poor harvest, seasoned kanpyo and conger eel, whose supply continues to decline both domestically and in China. Prices of raw materials are rising. In seafood ehomaki, the price of domestic tuna, which is often used, has risen by more than 40% from the previous year, and the price of imported salmon and trout, such as salmon, which is popular with children, continues to rise significantly. Against this backdrop, it seems that there are many cases where the ehomaki has decided to pass on the price.

However, in terms of price increases, the trend was divided between low-priced ehomaki and high-priced seafood ehomaki. Looking at the price increase from the previous year, 26 companies answered that the price of eho-maki was “less than 100 yen”, and combined with “staying the same” (22 companies) accounted for more than half of the total. In particular, there is a tendency to limit price increases in 10-yen increments at food supermarkets, which tend to attract customers as seasonal products.
On the other hand, 31 companies increased the price of seafood ehomaki by “150 yen or more”, followed by “no change” (25 companies) and “less than 150 yen” (12 companies). The ratio of price increases of 100 yen or more is higher for seafood ehomaki (58%) than for ehomaki (31%) by more than 20 points, and the higher the price range that uses plenty of seafood, the higher the price increase. was seen. As food prices continue to soar, attention will be paid to whether the reservation sales system will become established for seasonal products as a measure to control food costs.
