Born in Kyoto in 1975. While in college, he traveled to Europe and encountered Italian cuisine, and started his career as a chef. After training at “Il Pappalardo” in Kyoto, he moved to “Il Ghiottone” in 2002 when Chef Yasuhiro Sasajima became independent. After training under Mr. Sasashima, he served as head chef at Il Ghiottone for nine years. In December 2014, he opened his own shop “cenci” in Okazaki, Kyoto. Chef Sakamoto’s dishes are creative and complex in composition, yet simple in taste, and focus on bringing out the best of the ingredients. The world is paying attention to Mr. Sakamoto’s new cuisine, which he creates using his network of producers all over Japan.
