At the reception in 2023 (5th year of Reiwa), “Veggie Jerky” jointly developed with Noen Teitaro Co., Ltd., which utilizes radish and Atsumi turnip from the Shonai region of Yamagata Prefecture, was exhibited at the “Shin Kitamae” booth of the Shonai region of Yamagata Prefecture. provided by

■ Issues to be solved by this project: “Hidden food loss”
The amount of “food loss” discharged from domestic business
establishments and households is said to be 5.22 million tons, but this figure does not include “agricultural products discarded in fields”, and 1.78 million tons are produced every year. Substandard vegetables (excluding fruits) are discarded. This indicates that 13% of the total vegetable harvest is “hidden food loss” that never reaches the market. In fact, about 200 tons of radishes produced by Teitaro per year, which is about 20% of the production volume, have to be discarded as non-standard.
■ “Sustainable next-generation Otsumami” born in the field
In order to solve this problem, the two companies have collaborated to launch the “next-generation food in the field” project. After half a year of trial and error, this “vegetable jerky” was born. By the spring of 2023, exports to Singapore and Taiwan are also planned. We aim to enter the global market with our next-generation Otsumami. ■ Background of this product development
This sustainable vegetable jerky was born as one of the activities of the Shonai Agribusiness Study Group. The Shonai Agribusiness Study Group aims to create new industries through cross-sectoral
collaboration between the Sakata City Industrial Promotion and Town Development Center Sanroku and Leave a Nest Co., Ltd., and is active as a private entity that takes on the challenge of verifying and socially implementing various collaborative hypotheses and promoting industrial development in the Shonai region. doing.

There are many people in the world who have dietary restrictions such as diabetes, high blood sugar, obesity, and allergies.
Therefore, we focused on konnyaku, an ancient Japanese plant-based healthy food. We aim to realize “a world where everyone can enjoy delicious food without restrictions” by utilizing “NinjaPaste”, a material that keeps konjac paste in a unique technology, as a next-generation ingredient.
■ Next-generation konjac material NinjaPaste
NinjaPaste is a next-generation konnyaku material that has succeeded in keeping regular konnyaku in a paste form without completely solidifying it. By mixing it with other materials, it reinforces the target fibers and forms konnyaku gel, realizing strong binding molding. Therefore, it is possible to mold foods that take advantage of the goodness of the ingredients without using wheat gluten, eggs, or starch syrup.
■NinjaFoods open innovation
If we only monopolize NinjaPaste and provide the final product, it is impossible to realize the world we aim for, “a world where everyone can enjoy delicious food without restrictions.”
Therefore, we believe that by providing NinjaPaste itself, which is the core material, to the outside, and by organizing and opening up knowledge about its utilization, it will be possible to make all kinds of food more flexible.
Currently, we are promoting the following co-creation projects with various external companies.
・ A protein bar project (https
