Daikon radish and Atsumi turnip (red turnip) produced in the Shonai region of Yamagata Prefecture (Sakata City and Tsuruoka City). Among them, it is a natural and sustainable “vegetable jerky” that was born using materials that had to be discarded due to being too large or partially burned by snow.
Daikon radish, which has a reputation for being as sweet as a pear, and Atsumi turnip, a red turnip that is a specialty of the Shonai region. The ingredients are only NinjaPaste, vegetables, soy milk, soy sauce, and sesame oil! A super healthy snack with only 8.5kcal (radish) and 0.4g of fat per bag.

■ Issues to be solved by this project: “Hidden food loss”
The amount of “food loss” discharged from domestic business
establishments and households is said to be 5.22 million tons, but this figure does not include “agricultural products discarded in fields”, and 1.78 million tons are produced every year. Substandard vegetables (excluding fruits) are discarded. This indicates that 13% of the total vegetable harvest is “hidden food loss” that never reaches the market. In fact, about 200 tons of radishes produced by Teitaro per year, which is about 20% of the production volume, have to be discarded as non-standard.
■ “Sustainable next-generation Otsumami” born in the field
In order to solve this problem, the two companies have collaborated to launch the “next-generation food in the field” project. After half a year of trial and error, this “vegetable jerky” was born. NinjaPaste is a next-generation konnyaku material that has succeeded in keeping regular konnyaku in a paste form without completely solidifying it. By mixing it with other materials, it reinforces the target fibers and forms konnyaku gel, realizing strong binding molding. Therefore, it is possible to mold foods that take advantage of the goodness of the ingredients without using wheat gluten, eggs, or starch syrup.
