Y.G GROUP Co., Ltd. (Representative Director: Yutaka Gondo), which operates the ramen brand [maren] produced by a Japanese restaurant, will open “soba MAREN Higobashi”, the fourth maren group store on Saturday, April 1, 2023. We will open the store. This will be the first FC (franchise) store opening.

In December 2020, during the corona crisis, “maren” became a popular ramen restaurant by renovating the former site of a creative Japanese restaurant at Miyakojima Station. The following April, the second store, Tsukesoba maren, was opened at Kyobashi Station, and in February 2022, the third store, Mazesoba maren, was opened at Nakazakicho Station.
In January 2023, “Tsukesoba maren” was renamed “soba MAREN” and relocated to Sakaisuji-Hommachi Station, and preparations have been made to open other stores through franchises.
In about two years, it has grown into a brand with three stores, and on April 1st of this year, the first FC (franchise) “soba MAREN Higobashi store” will open.

L.A. COMPANY Co., Ltd., which handles store interior business and restaurant management, has joined this FC (franchise). We are also particular about the store design, and we offer mainly “superb mixed soba by a Japanese restaurant” in a stylish atmosphere that is easy for single customers regardless of gender. At night, we plan to open in a standing style.

How Mazesoba is Made ~Selected Ingredients~
As with other stores, we offer the finest mazesoba using carefully selected ingredients.
Noodles: Flavorful domestic wheat “Kitahonami” is blended with whole grains containing a lot of dietary fiber vitamin B1 and iron. By promoting fermentation while thoroughly controlling the temperature and humidity, it is an exquisite noodle that maximizes the flavor, aroma, and body.
Oil: We use chicken oil that is carefully extracted from carefully selected free-range chicken, and we make the finest flavored oil that matches the type of noodles.
Broth: Fresh whole chicken, chicken bones, pork bones, etc. are added with flavored vegetables and carefully cooked to make a light white chicken broth.
Soy Sauce Sauce: A blend of 4 kinds of soy sauce, mainly natural ingredients from Shodoshima’s cedar barrels, and re-shikomi soy sauce. The umami of oysters is added to the secret ingredient.
Salt sauce: A blend of seaweed salt, which is packed with the taste of seawater and seaweed. Rausu kelp is also added for a gentle and mild finish.
Pork char siu: Carefully selected pork that is juicy, tender, and has a light sweetness. It is slowly fired at a low temperature, resulting in a surprisingly moist finish.
Eggs: Izumo eggs from Shimane Prefecture are used. Vivid and rich yolk with springy egg white. It is an egg full of umami that is different from ordinary eggs.
