This time, the cafe “ukafe (@ukafe.info)” operated by the total beauty company uka (@instauka, @ukacojp) will hold the 3rd Marche on Saturday, March 11th.
At ukafe, which aims to be a cafe that is good for both the body and the earth, we use delicious and safe vegetables. We are fortunate enough to offer organic vegetables from Mr. Kanichi Saito, a producer in Sanmu City, Chiba Prefecture.
For more than 30 years, Kanichi Saito has been fermenting sake lees from local sake breweries, kelp husks from soy sauce factories, and coffee bean husks from coffee makers without relying on chemical fertilizers or pesticides. We made compost and established the “Tagayasu Farming Method” using it as soil. We are promoting farming methods that bring out the natural power of vegetables in a more natural environment by avoiding the use of agricultural materials and machines that place a burden on the environment as much as possible. In order to convey its appeal, ukafe is holding a marche on the second Saturday of every month.
From Saturday, March 11th, we will also introduce a new ukafe-limited salad bowl and ukafe bowl menu that uses vegetables that will be sold on the day.
Organic vegetables are more nutritious than general vegetables, and are also good for anti-aging and prevention of lifestyle-related diseases. In addition, it is characteristic that there is little environmental burden because chemical fertilizers are restricted. Delicious, beautiful and healthy. Eat organic vegetables that are good for your body and the earth.

The ukafe limited salad bowl uses Brussels sprouts, carrots, blood oranges, and Kitakari potatoes. (*Subject to change)
Brussels sprouts and carrots, which contain about four times as many nutrients as regular cabbage, are rich in beta-carotene and potassium, so anti-aging effects can be expected.
By adding Kitakari potatoes and quinoa, which are characterized by their sweetness, it adds a chewy texture and a sense of satisfaction. The dressing is made with blood oranges and mangoes from Ishigaki to give it a refreshing flavor.

March’s ukafe bowl is dal curry without five prickly pears.
“Dal” means beans in Hindi, and it is a mild curry that does not use meat. India is a country with a wide variety of beans, and it is popular as a home-cooked dish because vegetarians can eat it.
Dal curry with carrots, tomatoes, and yellow split peas is full of dietary fiber.
Slowly simmering until it falls apart increases the thickness and umami, and prepares the intestinal environment.
Accented with curry leaves, it is finished with five spices: garam masala, turmeric, cumin, coriander, and chili powder.
It is a delightful dish that comes with a mini salad using Mr. Kanichi’s vegetables.
