Born in Sapporo, Hokkaido in 1958.
Started cooking at the age of 15. He trained at Akasaka “Sanno Hotel”, “Tokyo Hilton Hotel”, “Capitol Tokyu Hotel”, etc. At the age of 27, he became the head chef of a hotel in Tokyo, and in 1992 became the hotel’s executive chef. In 1996, he became the representative director and executive chef of “Turandot Yusenkyo”.
In 2001, he opened “Wakiya Ichiemi Charo” in Akasaka, Tokyo, and is currently the owner and chef of three restaurants in Tokyo.
Based on the tradition of Shanghai cuisine, the body-friendly dishes that incorporate plenty of seasonal ingredients, and the dishes that are beautifully arranged on carefully selected tableware have been highly praised both domestically and internationally for expressing the delicacy and luster of the Japanese. While leading the world of Chinese cuisine in Japan, he is energetically conveying the joy of Chinese cuisine through media activities such as NHK’s “Kyo no Ryori”. In 2008, received the Minister of Health, Labor and Welfare Award (Minister of Health, Labor and Welfare) and Tokyo Meister (Governor of Tokyo).
In 2010, he was awarded the Excellent Skilled Worker (Contemporary Master Craftsman) by the Ministry of Health, Labor and Welfare, and in 2012, he was awarded the Bronze Award in the Ministry of Agriculture, Forestry and Fisheries Chef Award System “Cooking Masters”. Received the Medal with Yellow Ribbon in the autumn of 2014. This year marks the 50th anniversary of his life as a chef.
