“~ Edo Tokyo Vegetables ~ Tokyo High School Cooking Contest 2023” will be held We are looking for “original recipes” using Edo Tokyo vegetables [Terashima eggplant]!
The JA Tokyo Chuokai is an opportunity for high school students in Tokyo who like cooking to learn, know, and taste the appeal of Edo-Tokyo vegetables and Tokyo-produced agricultural products. Continuing from last year, we will hold a cooking contest in order to connect the legacy of taste to the future.

~This year’s task ingredient is Edo Tokyo vegetables [Terashima eggplants]~ ■ Title ■
“~ Edo Tokyo Vegetables ~ Tokyo High School Cooking Contest 2023” ■Eligibility■
・Students, individuals, or groups (up to 3 people per group) attending a high school or vocational school in Tokyo.
・There is an environment where you can watch videos online.
・Must be able to participate in the practical examination held in Tokyo on October 22nd (Sun) and be able to cook and make a
presentation.
・Must be able to participate in the awards ceremony held in Tokyo on Sunday, October 29th.
■Application conditions■
・Limited to unpublished original recipes using [Terashima Eggplant]. ・A recipe that can be cooked in 90 minutes from preparation to serving. ・For the recipe, use at least 100g (2-3 pieces) of [Terashima Eggplant] for 4 servings.
・Ingredients other than [Terashima eggplant] are not limited to Edo-Tokyo vegetables.
・The upper limit of the material cost is about 2,000 yen for 4 servings other than the [Terashima eggplant] provided.
・In the case of group participation, it is limited to the same school. ・The application recipe is limited to one work per person (one group). [Terashima Eggplant] will be provided free of charge by JA Tokyo Chuokai. *The number of servings may be adjusted depending on the growing conditions of Terashima eggplant, such as unseasonable weather. ■Contest flow■

★What are Edo Tokyo Vegetables★
It refers to the vegetables grown in and around Tokyo, either native species that inherited the vegetable culture of Tokyo that began in the Edo period, or vegetables derived from cultivation methods. Although it was discontinued for a while, in 2011, the JA Tokyo Chuokai established this name so that it could provide the citizens of Tokyo with products produced in Tokyo, and currently 52 items have been certified.
* Efforts for vegetables in Edo Tokyo * The economy in Tokyo changed from the Edo period, which was centered on rice, to the period of high economic growth and the bubble period. Many problems have arisen, such as a decrease in food production and dependence on imported food. In the past, there was a lot of farmland in the city of Edo and its suburbs, but now only 11 of the 23 wards of Tokyo have farmland. Producers are making efforts even in such a changing environment, and continue to produce and supply fresh vegetables, including Edo-Tokyo vegetables. Under these circumstances, JA Tokyo Central Association is working to expand production and consumption by supporting producers and training young chefs in order to promote the branding of Edo-Tokyo vegetables.
★Characteristics and history of Terashima eggplant★
They are slightly smaller than regular eggplants, and have a firm skin and firm flesh. It is also called “Tsurubososennari eggplant”. Because the fertile land along the Sumida River was suitable for cultivation, it was cultivated mainly in Terashima Village (now Sumida Ward). The Terashima eggplant, which reaches its harvest time earlier than other varieties, is described in the “Shinpen Musashi Fudoki Manuscript” published in 1828, “Even though the shape is small, it is called Mowase-nasu and is beautiful.” It was shipped to Senju and Kanda as a local specialty. After the Great Kanto Earthquake that occurred in the Taisho period, production was discontinued due to a decrease in farmland due to the development of residential land, but it was revived in 2009.
