Restaurant CYCLE opened in Otemachi, Tokyo on October 27, 2023. To commemorate our first Christmas since opening, we have prepared a special Noel menu.
Starting with tapas of “roots, leaves, flowers, fruits” which represents the “cycle” of nature, which is the restaurant’s concept, we started with chef Mauro Colagreco’s signature dish, beetroot carpaccio with caviar and fresh cream sauce. We will also prepare special dishes that give you a taste of Christmas in France, such as chapon (castrated chicken), which is roasted whole and moist over an open wood fire and can only be eaten at this time of year. Capon is rare and expensive because it requires a high level of skill and takes a long time to raise, and its skin is thicker than that of a turkey, making it soft and crispy, and is said to be the best Christmas food in France.
In addition, we will be serving Dom Perignon, a special cuvée that is suitable to decorate the holy night, as a special toast drink only during Christmas. At the end, we will prepare a small Christmas cake specially made by CYCLE pastry chef as a souvenir.
