Background of research and development and market introduction of delicious low-salt umeboshi
Too much salt can cause high blood pressure, which can lead to cerebrovascular disease and heart disease, so reducing salt intake is said to be effective in preventing and managing this. Under these circumstances, umeboshi is treated as a symbolic food with high salt content, and efforts to reduce salt content have been a major challenge for us for many years. Umeboshi lovers, in particular, tend to prefer a moderately salty taste, and there are many opinions that low-salt umeboshi are not tasty, so it never took hold in the market. Against this background, since 2007 we have been working on research and development of delicious low-sodium umeboshi and actively introducing it to the market.
Results of 15 years since development and future plans
As the production technology for delicious low-salt umeboshi has been established and its market introduction has progressed through a wide range of sales channels, sales of low-salt umeboshi exceeded 2 billion yen* in fiscal 2022 (relatively reduced salt content 2 3.7 tons) The average salt content of our seasoned umeboshi has decreased to 6.5% (-2.1% compared to 2010). The salt content is much lower than the 7.6% salt content of seasoned pickled plums listed in the Japanese Food Standard Composition Table.
