At Biwako Hotel (Location: Hamacho, Otsu City, Shiga Prefecture, General Manager: Yoshikazu Maeda), from Saturday, November 25, 2023 to Tuesday, January 30, 2024, at “Tempura Omi” on the second floor. We offer a special kaiseki course “Shimizu ~SHISUI~Winter” with the theme of -Water Journey-.

“SHISUI” was born in July 2023 as a special kaiseki menu with the theme of water springing from the mountains, forming 460 rivers, watering the fields of the village, reaching Lake Biwa, and pouring into the sea – a water journey. ~Summer”. The second part explores the winter of the lake country.
It is one of Lake Biwa’s representative delicacies in winter, such as the “Hyogo”, a young sweetfish whose body is as transparent as ice, and the “Hyogo”, which is said to be the most fatty and delicious in the winter of the year. Charcoal-grilled “Moroko” is now available. Once again, Tempura “Mizuguru” will feature freshly fried
ingredients from the forest, village, Lake Biwa, and the sea that can only be enjoyed at the counter.

A species endemic to Lake Biwa. During the winter, Moroko, which spends its time hiding deep in Lake Biwa, is called “Kan Moroko” and is said to be the most delicious because of its fat content. Finally, the grilling method is unique to Honmoroko, which has been passed down locally, by inserting it into a grid and grilling it upright. The fat from the morsel drips down onto the head, making it crispy like fried food.
