To commemorate Chihiro Hashimoto’s winning of the gold medal, we created a dessert using rose water called “Cream Cheese Semifreddo, Harmony of Rose and Orange.”
~Thinking about the Valley of Roses~* will be on sale from Monday, January 15, 2024 to Thursday, February 29, 2024.
In the region called the Valley of Roses in Bulgaria, the Bulgarian rose (damask rose), which produces the world’s highest quality rose oil and rose water, blooms. The fragrant Bulgarian rose water is attracting attention in the Japanese, Western, Chinese, and
confectionery circles as a new seasoning that not only adds fragrance but also enhances the taste of ingredients.
“Cream Cheese Semifreddo Rose and Orange Harmony” won the gold medal at the “10th Rose Water Recipe Award” this time.
~Thinking of the Valley of Roses~” is a cream cheese semifreddo with a soft texture that feels like it’s half frozen, with accents of rose water and gin, and fresh rose jelly on top of the semifreddo. I decorated it. Surrounded by a yogurt and orange sauce, oranges marinated in rose water are scattered around, and a rose illustration is drawn on the plate, making it a dessert where you can enjoy the scent of roses until the last bite.
In addition to the gorgeous and gentle scent of rose and the refreshing taste of orange, this dish has a refreshing taste of gin that will leave you enchanted and soothed.

◆Thoughts put into this dessert◆

Before creating this piece, I researched the production areas of rosewater in Bulgaria.
Looking at photos of the Valley of Roses, where the damask roses used in rose water are cultivated, I realized that roses are cultivated in the terrain surrounded by rich mountains, in a warm and rainy climate, and in well-drained soil. When I found out that there was, I instinctively wanted to pair it with orange.
We purposely combined the sweet scent of rose with the contrasting sourness and refreshing taste of orange. Even the cream cheese semifreddo has a scent of rose, making it a dish where you can enjoy the scent of rose until the last bite. The highlight is that the gin added as an accent goes well with the rose water and orange, making you feel tipsy.
