What is “umami rice polishing”? -Two types of rice polishing methods: “Umami white rice” and “Umami brown rice”
Umami white rice is a rice polishing method that leaves as much of the nutritious germ as possible and the umami layer (aleurone layer) packed with flavor and nutrients as much as possible. The rice is polished more slowly and gently than regular rice polishing. The umami layer contains various nutrients such as oligosaccharides and amino acids, which are the components of umami.
Umami brown rice is a rice polishing method that removes only the hard wax layer on the surface of brown rice, preserving the nutritional value packed in the bran layer, making it easier to cook and eat. It is softer and more sticky than brown rice.
