Additionally, as a pre-event for the project, there will be a food exchange event with producers at 800°DEGREES Minami Aoyama store on February 4th (Sunday), and a limited-time original menu will be offered at NEWoMan Shinjuku store from February 7th.

“Sato” is an Italian word meaning “hometown” or “sato” and “alla Tavola” means to table.
“Bringing hometowns to your table” is a concept we bring to our hometowns all over Japan, to STABLES’ authentic Neapolitan pizza restaurant 800°DEGREES, and to Yamagata Prefecture, a famous producer of domestically grown Italian vegetables, which is the impetus for this Sato alla Tavola project. This word was created in Japanese and Italian out of respect for Kahoku Town.
Also, “alla” can be read backwards as “alla”.
We have a hidden desire to not only connect in one direction, from hometown to table, but also to connect from table to hometown. Regions and hometowns across Japan have many food cultures and local ingredients that have been passed down from ancient times.
We are very close to the producers who support our food, and food and agriculture are deeply rooted in our daily lives.
We want to deliver local daily life to you in the town through our tables. I want to use the table as an opportunity to convey my hometown to you. This is a project launched with this in mind.

Sato alla Tavola’s initiatives
Sato alla Tavola plans to develop the following initiatives in order to convey the appeal of local food, culture, and producers.
・Development and provision of original menus using local ingredients We will develop original menus using local ingredients and offer them for a limited time at 800°DEGREES stores. When developing menus, STABLES chefs and staff go directly to the region and visit producers.

The producers and consumers of the ingredients for the original menu that will actually be served sit around the same table, creating an opportunity for connection.
In addition, in conjunction with the original menu offer period and meal exchange event, a marche of local ingredients will be held at 800°DEGREES stores and other locations.

In the future, we plan to release a website that will introduce Sato alla Tavola’s thoughts and activities, as well as the region, ingredients, producers, etc.

Sato alla Tavola Pre-Event Collaboration with Kahoku Town, Yamagata Prefecture The Sato alla Tavola pre-event is set in Kahoku Town, Yamagata Prefecture, a famous production area for domestic Italian vegetables. On Sunday, February 4, 2024, we will be holding an original menu course using Kahoku Town ingredients, a meal exchange event with local producers, and a direct sales market of Kahoku Town at 800°DEGREES Minami Aoyama store. .
In addition, for 6 days from Wednesday, February 7, 2024 to Monday, February 12, 2024 (holiday), 800° DEGREES NEWoMan Shinjuku store will offer an original menu in collaboration with Kahoku Town for a limited time.
・On Sunday, February 4, 2024, a meal exchange event with Kahoku-cho producers and a direct sales marche will be held at 800° DEGREES Minami Aoyama store.
We will be inviting the producers of Kahoku Italian vegetables used in the collaboration menu with Kahoku Town, as well as members of Kahoku Rashisha, a local trading company in Kahoku Town, to a networking event over a special lunch course available only on this day. ・About Kahoku Town, Yamagata Prefecture
Kahoku Town, located in the center of Yamagata Prefecture, has been producing Italian vegetables since 2011.
In response to the chef’s desire to use domestically produced Italian vegetables, producers and the Chamber of Commerce and Industry teamed up to start the business, and currently, the external sales division of regional trading company Kahokurashi Co., Ltd. plays a central role, with 15 producers working together. The company sells more than 60 types of products to about 170 restaurants and department stores, as well as about 25 wholesale companies.
Furthermore, we have a local antenna shop in Sangenjaya, Tokyo, and are working to rebuild the industry by expanding and linking consumer and market needs learned from the tertiary industry to the secondary and primary industries.
