Our main dishes are the original menu, “Seafood Doria” and “Spaghetti Neapolitan,” as well as the traditional “Hamburger Steak with Demi-glace Sauce,” a recipe passed down from the time we opened our doors.For dessert, we offer the hotel-made “Custard,” which has a traditional firm texture and gentle flavor. We have prepared “pudding” for you. You can change it to “pudding a la mode” or seasonal “Kiyomi orange parfait” if you like. In addition, as an optional drink menu, you can also choose the “Adult Cream Soda”, which has a rich and juicy taste packed with the ripe flavor of Hokkaido red meat melon. A dish improvised by Sally Weil, the first executive chef, for a foreign guest who was feeling unwell.
【Seafood Doria】
“Doria” is a dish created by Hotel New Grand’s first executive chef, Sally Weil. This is a dish that we improvised and created in response to a request from a guest who was staying with us, “I’m not feeling well, so I wanted something to soothe my throat.” When we served creamy shrimp on butter rice, sprinkled with gratin sauce and cheese, and baked in the oven, it was very well received and has become one of Hotel New Grand’s signature dishes. Its deliciousness spread to other hotels and restaurants through its disciples, and it became a staple of Western cuisine across the country.

Seafood Doria
This dish was created by second-generation executive chef Shigetada Irie, inspired by what American soldiers ate during the requisitions. [Spaghetti Neapolitan]
After the war, the hotel was occupied by the US military and was used as quarters for GHQ officers until 1952. U.S. soldiers boiled spaghetti, which was a military food, and seasoned it with salt, pepper, and tomato ketchup. Taking this as a hint, Shigetada Irie, the second-generation executive chef, “created a spaghetti dish worthy of being served at a hotel.” Hotel New Grand’s “Spaghetti Neapolitan” was created with an original sauce. The sauce is made by frying finely chopped garlic and onions until they turn golden brown, then adding raw tomatoes, boiled tomatoes, tomato paste, bay leaves and olive oil.The sauce is rich in flavor and brings out the natural flavor of tomatoes. A dish devised by a pastry chef at the time to please American officers’ wives. [Pudding a la mode]
During the requisition era, the pastry chef at the time served “pudding a la mode” to please an American officer with a sweet tooth who was staying at the hotel. We combined pudding and vanilla ice cream with colorful fruits and served them in the oblong glass bowls with legs that were used for appetizers at the time. Because of this sophisticated style, it was given the name “pudding a la mode” by military officers’ wives. This gorgeous and beautiful dessert continues to be loved throughout the ages.

It opened in 1927 (Showa 2) as an orthodox European-style hotel as a symbol of Yokohama’s recovery from the Great Kanto Earthquake. The main building, which has remained unchanged since its opening, was designated as a historic building by Yokohama City in 1992, and in 2007 was certified as a Heritage of Industrial
