The Lobby Lounge at Shangri-La Tokyo (Location: Marunouchi,
Chiyoda-ku, Tokyo, General Manager: Matthias Sutter) welcomes guests with the utmost care for their families, and is surrounded by magnificent nature and beautiful water. A limited-time menu using ingredients from the blessed Kumamoto Prefecture will be available from May 1st.
Kumamoto Prefecture is also known as the “Land of Fire” because Aso has one of the world’s largest calderas, and the “Land of Water” because the area around Mt. Aso is blessed with clean underground water. The chef, who is fascinated by the colorful food culture of each season, actually visited the production area and devised three menus using carefully selected ingredients.

Akaushi steak heavy
“Akaushi Steak Ju” is a shoulder loin of Aso’s red beef, which has a lot of lean meat and has a refreshing taste, grilled on a lava stone. The outside is golden and fragrant, the inside is moist, and served on top of fluffy rice from Kumamoto Prefecture, topped with Japanese sauce. The more you bite into it, the more delicious it becomes.

Amakusa Daioh Teriyaki Heavy
“Amakusa Daioh Teriyakiju” is made with Amakusa Daioh, a legendary local chicken that has made a comeback. It is characterized by its elastic texture and rich taste. Bonito flakes and onion salad (sliced ​​onions) are spread on top of Kumamoto-produced rice, grilled skin-first with lava stones, and topped with appetizing grilled teriyaki. You can enjoy the aroma of the skin and the rich taste.

Momotaro salmon heavy
“Momotaro Salmon Ju” uses Momotaro salmon, which is grown in Kumamoto’s natural groundwater and has a sweet and savory taste. To bring out the flavor even more, marinate the salmon with salt and let it sit overnight, then serve it on top of vinegared rice. Add shiso between the rice and salmon for an accent, and top with salmon roe. Please enjoy the fresh Momotaro salmon that looks beautiful.
