Taiwanese burger “Guabao” is a Taiwanese soul food made with various ingredients such as braised braised pork and mustard greens sandwiched between Taiwanese manju (the skin of a Chinese steamed bun). It has another name, “Ki-bite,” because it looks like the mouth of a biting pork, and its half-moon shape looks like a wallet, so it is considered a food that brings good luck.
■What is the origin of “Tobu no Saka”?
The name “Tobu no Saka” comes from the “to” for seaweed and the “bu” for pig, expressing our desire to provide delicious food to our customers by making an effort to climb the slope with the momentum of “fly”.

The difference between Taiwanese rou rou and Japanese braised pork is whether or not the pork skin is used. Generally, the skin is removed from commercially available three-stage pork belly in Japan, but Taiwanese minced meat leaves the skin on and uses its collagen and gelatin to give the minced meat its stickiness. This viscosity further traps the soy sauce aroma, and allows the eater to enjoy the unique gelatinous texture of the skin. Our minced meat retains the

■Background to the opening of Tobu no Saka In 2023, Mr. Chiu Bokai, who was working in the IT field, established Shokuno Chiu Co., Ltd. with a passion for Taiwanese cuisine.
“Tobu no Saka” will open in Takadanobaba in 2024.
After graduating from university in Taiwan, Mr. Chiu missed the taste of his hometown while studying abroad, so he began learning Taiwanese cuisine. After 15 years of training, I decided to change jobs for the last time before turning 40. I decided to open a store where I could deliver the taste of my own memories.
The idea is to give international students, Taiwanese residents in Japan, and Japanese people interested in Taiwanese cuisine a taste of Taiwan’s food culture.
The restaurant’s name comes from the other name for Taiwanese burger, “Kibao”. “Tobu” represents the image of Taiwanese people’s hard work and climbing uphill, and “bu” also refers to the flavor of pork.
