“~Edo Tokyo Vegetables~Tokyo High School Students Cooking Contest 2024” will be held
*We are looking for “original recipes” using Edo-Tokyo vegetables [Magome three-inch carrots]! *
JA Tokyo Central Association aims to provide opportunities for students attending high schools in Tokyo who love cooking to learn, know, and taste the appeal of Edo-Tokyo vegetables and agricultural products from Tokyo, as well as the history and stories of Edo-Tokyo vegetables. In order to pass on the legacy of taste to the future, we will be holding a cooking contest just like last year.

“~Edo Tokyo Vegetables~Tokyo High School Students Cooking Contest 2024”

* ■Application qualifications■*
1. Must be a student (individual or team/up to 3 people per group) attending a high school or technical college in Tokyo.
2.Be able to watch videos online.
3. Must be able to participate in the practical examination held in Tokyo on October 14th (Monday/Holiday) and be able to cook and make a presentation.
4. Be able to participate in the awards ceremony to be held in Tokyo on Saturday, October 26th.

* ■Application conditions■*
1. Limited to unpublished original recipes using [Magome 3-inch carrots]. 2. The recipe should take less than 90 minutes from preparation to presentation. 3. For the recipe, please use 200g or more (1-2 carrots) of Magome 3-inch carrots for 4 servings.
4. Ingredients other than [Magome three-inch carrots] are not limited to Edo-Tokyo vegetables.
5. Material costs will be limited to around 2,000 yen for 4 servings, other than the [Magome 3-inch carrots] provided.
6. Team participation must be within the same school.
7. Only one recipe can be submitted by an individual or a team. * [Magome three-inch carrots] will be provided free of charge by JA Tokyo Central Association. *
*The number of servings may be adjusted depending on the growth conditions of Magome 3-inch carrots, such as inclement weather.

* ■Contest flow■*
1. Learn about Edo-Tokyo vegetables with videos (scheduled to be released on May 13th)

3. Magome three-inch carrots will arrive (from around July 10th) It will arrive from JA Tokyo Central Association or the producer. 4. Develop original recipes

July 25th (Thursday) ~ September 6th (Friday)
6. Announcement of recipe (document) examination results
Friday, September 13th Eight outstanding works will be selected. ●Examination criteria●
1. Do you understand Edo-Tokyo vegetables?
2. Do you understand the characteristics of Magome three-inch carrots? 3. Do you have any unique ideas or ideas?
4. Does the recipe make you want to try it?

7. Practical examination
October 14th (Monday/Holiday)
Venue: Tsuji Culinary School Tokyo (4-1-1 Nukii Kitamachi, Koganei City, Tokyo) The 8 works selected as excellent works will be cooked and presented at the venue, and the judges will taste them and select 5 works.

8. Judging announcement & award ceremony
  October 26th (Sat)
Venue: Tokyo International Forum Hall E2 “Tokyo Taste Festa/Tokyo Agriculture Festival” Special Stage (3-5-1 Marunouchi, Chiyoda-ku, Tokyo)
A screening announcement and award ceremony will be held for the five works selected as excellent works.
In addition, the best works will be commercialized and sold at a special booth at Taste Festa!

★What are Edo Tokyo vegetables?★
Vegetables that originate from native species or cultivation methods inherited from Tokyo’s vegetable culture that began in the Edo period, and refer to vegetables that were grown around Tokyo.
For a while, this name was on the verge of extinction, but in 2011, the JA Tokyo Chuokai established this name in order to provide Tokyo residents with products produced in Tokyo, and currently 52 items have been certified.

★Edo-Tokyo vegetable initiatives★
Tokyo has changed from the rice-based economy of the Edo period to Tokyo, and has gone through periods of high growth and bubbles. Today, Tokyo’s agriculture is facing aging workers, a lack of successors, a decrease in farmland, and a dependence on imported food. Many other problems are occurring.
In the past, there was a lot of farmland in and around Edo City, but now there are only 11 wards in Tokyo’s 23 wards. Producers are making efforts despite these changes in the environment and continuing to produce and supply fresh vegetables, including Edo-Tokyo vegetables. Under these circumstances, the JA Tokyo Central Association is striving to expand production and consumption by supporting producers and training young chefs in order to promote the branding of Edo-Tokyo vegetables.

★Characteristics of Magome three-inch carrots★
1. It was created by crossing Western carrots that were introduced during the Meiji to Taisho periods.
2. It is approximately 10 cm (3 sun) long, conical, and has a rounded tip. The fruit is bright vermilion and soft.
