On June 12th (Wednesday) *1), Aeon discarded fish at approximately 450 Aeon, Aeon Style, and Max Valu stores *2) for reasons such as being too large to process or unintentionally caught. We will be releasing two “black sea bream” items as the third installment of the “Topvalu Mottainai Fish Series,” which is an easy-to-use “low-use fish” that can be eaten deliciously without wasting it.

In April 2023, Aeon launched the “Topvalu Mottainai Fish Series,” which actively utilizes underutilized fish. The first offering is Japanese Medai, and the second offering includes fish species such as Redfish and Nagamenuke, which have been well-received by customers. In this third edition, we caught black sea bream, which eats cultivated seaweed and oysters, and used it as raw material.
Aeon set the “Aeon Group Food Waste Reduction Target” in 2017, and is working to reduce food waste and loss by introducing new technology and devising sales methods. Based on the concept of “Make waste delicious!”, we are accelerating product development efforts to reduce food waste and loss throughout the supply chain.

Oyster and seaweed farming is a thriving industry in the Seto Inland Sea, but in recent years there has been a problem in which black sea bream are being eaten before they are harvested. On the other hand, black sea bream caught in coastal fisheries have sometimes been returned to the sea without being put to effective use. The black sea bream that will be commercialized will be made from raw materials caught in collaboration with the Okayama Prefecture Yorishima Fisheries Cooperative along the Seto Inland Sea coast. They are placed in a cage and landed, and after the blood is drained, they are frozen and processed while maintaining their freshness. Because the fish is thoroughly processed after being caught, the meat has little odor, is refreshing yet has good fat, and has the subtle sweetness and umami of a white-fleshed fish.
▶ Seasoning that preserves the flavor and takes advantage of low-use fish that vary in meat quality.
Low-use fish has variations in plumpness and fat, but in order to eliminate this, we use pre-processing that does not bring out the flavor of the fish, resulting in a moist and soft texture. Black sea bream has little taste and goes well with any seasoning, but we finished it with two types of Japanese sauce that go well with side dishes, snacks, and bento boxes. This product is easy to prepare and saves time by simply baking after thawing.

■Products using sweet potatoes*2 (scheduled to be released from March 2024) This product uses “Oyaimo”, a taro grown in Ehime Prefecture, as the raw material. The taro that is generally available in the market consists of two parts: the baby potato and the grandchild. Most of them are then discarded. I upcycled and used this.
