Amino Co., Ltd. (Sendai City, Miyagi Prefecture), which operates a sushi business mainly in the Tohoku region, will begin experimenting with wearing functional wear in July with the aim of reducing the burden on sushi chefs. We will examine whether functional wear is effective in supporting the health of the artisans of the “sushi” culture, which is synonymous with Japan’s food culture.

In 2013, “Japanese cuisine” was registered as a UNESCO intangible cultural heritage. Sushi is one of the representative Japanese foods in Japan, and it is a popular food culture around the world. According to a survey conducted by the Japan National Tourism Organization in March of this year, the number of foreign tourists visiting Japan reached 3.08 million, an increase from before the coronavirus pandemic, the highest number ever. In addition, in a survey conducted by The Norinchukin Bank of tourists visiting Japan, when asked about the Japanese food they ate during their stay, about 70% of people answered “Sushi”, making it so popular. The sushi industry is popular with tourists, but the shortage of craftsmen is becoming increasingly serious. Being a sushi chef is not just about being able to make sushi; you also need to have knowledge of fish, which requires a certain amount of training. Furthermore, due to the labor shortage, health issues for employees due to long working hours and long standing positions have become an issue.

Under these circumstances, Amino Co., Ltd., which operates a sushi business with 31 stores nationwide, mainly in Tohoku, is focusing on creating a comfortable working environment for its employees. In collaboration with Relibu Co., Ltd., an apparel company headquartered in Sendai City, Prefecture, we will begin a health support experiment using functional wear. We will examine items such as how effective it was before and after wearing functional wear from July to November, and whether the number of visits to the osteopathic clinic was reduced.
The functional wear worn in this experiment is “Relivewear” sold by Relive Co., Ltd., which promotes blood circulation when worn. Ink mixed with minerals such as tourmaline is printed on the front and back of the shirt, and far infrared rays are emitted from there. Since its release in 2017, it has already sold more than 1 million pairs* and is used by many people, including the elderly, manual workers, nursing care workers, athletes, and more.

Mr. Ueno, CEO of Amino Co., Ltd., will cooperate with this initiative to see if it is effective in improving employee health issues, and depending on the results, it will be incorporated into uniforms at all stores, which will reduce the labor burden on all employees.
