Patisserie I griega will have its grand opening on Wednesday, July 3rd in Akasaka’s ARK Hills. This store is a patisserie that serves sweets made with seasonal fruits, run by Junko Yoshida, one of the founding members of L’Atelier de Joel Robuchon, as a pastry chef. In addition, as a summer menu, we will start offering parfait, shortcake, and cherry and lemon mille crepe using Yamanashi peaches.

One of the founding members in 2003 of L’Atelier de Joel Robuchon, a famous Michelin-starred restaurant in Roppongi Hills. After working at Robuchon for 12 years, he worked as the manager of the patisserie department, and in 2019 opened “SPROUT Cafe Sakurazaka” with the founding members of Robuchon. I worked as a chef pastry chef. After that, the store was closed for redevelopment, but Patisserie I griega will be grandly opened in July 2024 in Ark Hills, near SPROUT Cafe. Patisserie I griega offers fresh sweets such as parfaits and cakes, which Yoshida specializes in, as well as baked sweets such as sables. Summer lineup using seasonal fruits
For our summer parfaits and shortcakes, we use peaches purchased directly from Homo Taoen and Koryuen in Yamanashi Prefecture. From mid-June to late August, the menu uses the most delicious ripe peaches picked that morning, so you can enjoy a different taste and texture each time you visit. The taste changes from sweet and sour, soft and juicy to creamy and rich. Then, in late August, the texture changes to a crispy texture. In addition, we use cherries for mille crepes.

Directly delivered peaches can be used not only fresh, but also as compotes and sorbets. This is a parfait where you can experience the different flavors and deliciousness of peaches.
To bring out the deliciousness of peaches even more, add cardamom and vanilla to the compote. By adding olive oil ice cream to peach sorbet, plum and yogurt sorbet, you can enjoy the difference in the melting point of the ice cream. You can also enjoy the combination of Greek yogurt, dill cream, black pepper, and other accents with the peach, which tastes delicious even when everything is mixed together.

We use plenty of peaches ordered from Yamanashi. The shortcakes change depending on the season, and we change the mix of fresh cream and the thickness of the dough depending on the fruit to create the most delicious shortcake that matches the fruit.

Between the 15 layers are layers of rich fresh cream with mascarpone and lemon curd made from squeezed lemon juice. A sweet and sour cake sprinkled with griot cherries that is recommended for early summer.

The pudding made with red eggs has a deep orange color. I used plenty of vanilla beans there. Enjoy the smooth melt in your mouth.

The baked goods, which make use of the aromas of butter and flour, have a simple taste that follows the philosophy that he cultivated during his time at Robuchon: “Make it without adding more than three ingredients.”
