Ferris Jogakuin University (Izumi Ward, Yokohama City, President: Rui Kohiyama) collaborated with Sotetsu Rosen Co., Ltd. (Nishi Ward, Yokohama City, President: Kiyotaka Soga) and Hayama Bonjour Co., Ltd. (Nishi Ward, Yokohama City, President: Yuji Migita). We planned and developed environmentally friendly breads and desserts based on the themes of “local production for local consumption” and “food loss.” It will be sold at the Hayama Bonjour Yumegaoka Soratos store, which opens on July 25th.

[Development history] This initiative was planned and developed in cooperation with Ferris Jogakuin University Eco Campus Research Group and Hayama Bonjour, with the aim of “promoting local production for local consumption” and “reducing food loss.” By using ingredients grown locally in Kanagawa Prefecture, we shorten transportation distance and reduce environmental impact. Additionally, arranged desserts that use bread ears that are not normally used contribute to reducing food waste by effectively utilizing ingredients. These breads and desserts were created by Hayama Bonjour artisans based on ideas submitted by students from the Ferris University Eco Campus Research Group, including selecting ingredients and proposing recipes. In addition to being considerate to the environment, we also pursue deliciousness, bringing out the best of local ingredients.
Furthermore, the dessert cups are made from recycled food trays collected at stores, contributing to the reduction of plastic. The idea behind this project is to let people know that they can take part in environmental protection while enjoying delicious bread and desserts. Ferris University Eco Campus Research Group and Hayama Bonjour plan to continue collaborating on local production for local consumption and reducing food loss in order to play a role in addressing environmental issues.
